RED POISON COFFEE ROASTERS is a distinguished specialty coffee roastery located in Sagamino, Kanagawa, Japan. Founded in 2018 by certified Q Arabica Grader Tomomichi Morifuji, the roastery is known for producing exceptionally clean and fruit-forward coffees with a refined sweetness and clarity.

A hallmark of RED POISON is its proprietary roasting machine, SOLID, which was self-developed by Morifuji over the course of three and a half years. Engineered for high thermal power and rapid cooling, SOLID allows for meticulous control throughout the roasting process, maximizing the potential of each green coffee.

The roastery’s minimalist, black-toned space reflects its commitment to detail, design, and craftsmanship. At Mel Coffee Roasters, they use refurbished and customized vintage roasters: a Probat L5 from 1968 and a UG15 from 1960.

Just as seasons change with temperature and humidity, green coffee beans and roasting machines similarly change in condition. Their equipment and expertise allow them to continually develop the perfect roast profile for these changing conditions.

Since their founding in 2013, they have established themselves as pioneers in bringing specialty coffee culture to Kumamoto, earning recognition not only throughout Kyushu but across Japan. With their flagship roastery AND COFFEE ROASTERS, they have expanded their presence through three AND COFFEE BREWERS locations in Kumamoto City and a coffee stand in Tokyo’s Hibiya district.

At the heart of their operation is master roaster Ryuho Tani, who continues to evolve and pursue the perfect cup. “Previously, I focused heavily on flavor to communicate each coffee’s unique character through roasting,” he explains. “Now, I’m mindful of balancing both flavor and texture.” They curate primarily light-roasted single origins perfect for daily enjoyment, while also featuring special process coffees like Geisha and anaerobic fermentation as limited releases.

Understanding their Kaminoura neighborhood’s preference for deeper roasts, they craft their lineup with approachability and balance in mind. Surrounded by boutique clothing stores and lifestyle shops, they serve as a gathering place for local workers and residents alike. “We want people to feel relaxed in our space while connecting with the community,” reflects their philosophy of creating an unpretentious environment that strengthens neighborhood bonds.
